
White bean balls
Ingredients
- 110 g stale bread
- 1 carrot
- 1 onion
- 1 clove of garlic
- 4-5 dried tomatoes
- 3-4 tbsp. chopped fresh parsley
- 600 g cooked white beans
- salt and pepper
- 2 tbsp. corn flour for polenta or breadcrumbs
- Olive oil for cooking
Instructions
- Crumble the stale bread.
- Peel carrot, onion and garlic. Cut into pieces.
- Finely chop the dried tomatoes.
- Wash, dry and chop parsley.
- Pour the white beans into the blender with the rest of the ingredients (except the breadcrumbs which will be used to coat the meatballs). Add salt and pepper to taste. Blend until you obtain a homogeneous filling.
- Shape into balls with your hands. Roll them in a little breadcrumbs or cornmeal.
- Heat an oiled frying pan and brown the meatballs for a few minutes on each side.
