Vegan gingerbread

Ingredients
  

  • 180 g wheat flour T65
  • 70 g rye flour
  • 65 g cane sugar
  • 2 tablespoons of gingerbread spice mix
  • 1 teaspoon of ground vanilla
  • 1 teaspoon of baking powder
  • 1 teaspoon baking soda
  • 200 ml soy milk
  • 150 ml agave syrup

Instructions
 

  • Mix dry ingredients in a bowl.
  • Mix wet ingredients together.
  • Stir wet ingredients into dry mixture and mix with whisk and/or spatula.
  • Pour into a cake pan lined with baking paper or oil.
  • Bake for 30 to 40 minutes at 180°C.
  • Let cool before unmolding and slicing.
