Scrumptious and comfort Sunday brunch.
Course Breakfast

Ingredients
  

  • 1 onion
  • 1 red bell pepper
  • 4 potatoes
  • half Soy Chorizo Trader Joe's
  • 1 cup Just Egg

Instructions
 

  • Cook the onion and bell pepper on medium heat in a frying pan.
  • Cook diced potatoes in boiling water.
  • When the onions are looking nice and golden, add the potatoes.
  • Add a half Soy Chorizo.
  • Wait until it looks goodand golden.
  • Pour one cup of Just Egg into the same frying pan.
  • Mix everything until the "eggs" are cooked.
  • Serve it!
