Scrumptious and comfort Sunday brunch.
- 1 onion
- 1 red bell pepper
- 4 potatoes
- half Soy Chorizo Trader Joe's
- 1 cup Just Egg
Cook the onion and bell pepper on medium heat in a frying pan.
Cook diced potatoes in boiling water.
When the onions are looking nice and golden, add the potatoes.
Add a half Soy Chorizo.
Wait until it looks goodand golden.
Pour one cup of Just Egg into the same frying pan.
Mix everything until the "eggs" are cooked.
Serve it!
